Fried chicken is a staple food, right!? Being low carb does limit our options, but it doesn’t mean we have to compromise on taste! This super easy low-carb breaded chicken recipe is sure to satisfy.

To make this, all you need is:

Ingredients
2 eggs
1-2TBS heavy cream or half & half
5-6oz shredded Parmesan cheese
2lbs chicken breast tenders
4 heaping TBS almond flour
Olive oil or other frying oil

Instructions
Pre-heat your pan on the stove to medium heat with about 1/2 inch worth of frying oil. On a small plate, have 2 TBS almond flour for coating. In a medium sized bowl (depending on your chicken tender size), mix your eggs and cream to make an egg wash. On another, larger plate, combine 1 TBS almond flour and half of your Parmesan cheese (you can add seasoning to your batter if you like, but I don’t feel it needs anything extra). You can choose to combine all of the remaining 2 TBS almond flour and all of the cheese at this time, but it gets sticky so I like to divide it up to prevent too much clumping.

Create an assembly line with your plates and start by lightly coating your chicken tenders in the almond flour, then dip the tender in your egg wash and finally coat in the Parmesan batter. Place it in the heated oil and simply fry until golden brown on each side! If the cheese is burning quicker than the chicken is cooking, turn down the heat and allow it to cook slowly. You may have to adjust the temperature and timing of your frying to best suit your stovetop and desired crispiness.

That’s it!! It’s so delicious and tastes just as good cold served the next day!
