Ingredients:
- 3 Large Eggs
- 2 TBS Heavy Cream
- 1 Heaping TBS Cream Cheese (softened)
- 4 TBS Butter
- 1-2 Thick Deli Slice Gouda Cheese (or cheese of choice)
- 2 Mini Sweet Peppers (I used 1 red and 1 orange)
- 1/4 Small Diced Onion (or less depending on taste)
- 1/4 Cup Spinach, Chopped
- 1 TSP Water (just a splash)
- Salt and Pepper to Taste
- Red Pepper Flakes to Taste
- Shredded Cheese to Taste
- 1 Avocado
- 4 Low Carb Tortillas
- Diced Tomatoes for Garnish
- Optional: Add Additional Veggies or Mushrooms
Instructions:
- Chop your onions, spinach, peppers and tomatoes and set aside.
- In a mixing bowl, whisk together the eggs, heavy cream, and cream cheese until well combined. This will take a bit for the cream cheese to blend well, but it doesn’t need to be perfect.
- In a large non-stick pan, melt 1TBS butter over medium heat.
- Add the diced onion and mini sweet peppers to the pan and cook until they are softened, stirring occasionally.
- Add the chopped spinach to the pan and cook until it is well sauteed, stirring occasionally.
- Pour the egg mixture into the pan and scramble everything together.
- Add the gouda cheese
- About half way through cooking, add another 1 TBS butter and blend in.
- Add a splash of water to the pan to help the eggs cook evenly.
- Season the mixture with salt, pepper and red pepper flakes to taste.
- Once the eggs are cooked through, remove the pan from the heat.
- Divide the egg mixture into 4 portions.
- Now heat a separate pan or griddle while preparing the burritos.
- Place a ¼ portion of the egg mixture on top of each tortilla.
- Sprinkle shredded cheese inside if desired.
- Roll up the burritos, folding in the sides as you go.
- Brown each side of the tortillas in the remaining 1-2TBS butter and remove from heat
- Cut the avocado in half, remove the pit, and slice it into thin strips.
- Once done, serve the burritos with sliced avocado and diced tomatoes on top.
